I started to say that it might not be quite as egregious in introductory bioanth, where most of the focus is on premodern anatomy - but, no, that's not true. Introductory classes like that are exactly where we should be discussing variation, where THE exemplary AMH should be other than European. Or better yet, maybe, a computer-generated composite average of humanity, if there's only one example shown.
